Mapillai Samba Kanji Mix is a heritage-grain porridge base made from Mapillai Samba rice — a medium-grain red variety traditionally cultivated in Tamil Nadu and served as a strength food at Tamil weddings. The kanji (rice porridge) cooked from this mix is deep pinkish-red, thick and filling — a very different experience from white rice porridge. To prepare: simmer the mix in water or thin buttermilk with salt, stirring until the rice breaks down into a smooth, creamy porridge. Cooking time is approximately 25–30 minutes on low flame.
