Kollu is one of the highest-protein pulses in Tamil Nadu and has been a traditional breakfast staple in Tirunelveli households long before protein content became a marketing term. The podi has a distinctive, assertive flavour — earthy, tangy and warming — that is best appreciated mixed with sesame oil over hot idlis.
