Mango thokku is intensely seasonal — raw mangoes are available only during summer months — and Mrs. Esakkiammal prepares it in limited batches at Iyarkai Pantry when fresh raw mangoes are available. The 100g jar is a 2–3 week supply. No preservatives, artificial flavours, colours or added vinegar. The tangy bite pairs well with curd rice, plain rice with ghee, idli, dosa and chapati.
