Kavuni Laddu is made from Kavuni arisi — the black glutinous rice native to Tamil Nadu's Tirunelveli and Thoothukudi regions. Kavuni rice turns a deep purple-black when cooked and has a naturally sweet, earthy flavour. It is rich in anthocyanins, the same antioxidant pigment found in blueberries and purple grapes. Mrs. Esakkiammal dry-roasts and grinds the Kavuni rice, combines it with jaggery, ghee and coconut, and hand-rolls each laddu at Iyarkai Pantry.
